Lunchbox fillers for the family.

It’s almost back-to-school time again… and along with it, the never-ending daily scramble to put together a healthy, yummy and fillling lunchbox that won’t come back home soggy and uneaten. To help with some inspiration and get back into the swing of things, we’ve rounded up some of our favourite lunchbox additions to make the back-to-school and back-to-work morning routine just a tiny bit easier.


Rest assured, these snacks won’t end up in the bin.

 


We love — Frittata Egg Muffins


Loaded with vegetables such as spinach, cherry tomatoes, capsicum / bell peppers and pops of feta, these are great grab-and-go option that will keep you fuller for longer. Good news, egg muffins will last in the fridge for 4 days, or 3 months in the freezer!



 

Maple-Sweetened Banana Muffins


Meet the banana muffins of your dreams. They’re fluffy, whole grain, naturally sweetened, totally delicious banana muffins. They’re also about as healthy as muffins can be. The recipe calls for basic ingredients and you can mix them all together in one bowl. Too much to be true? Nope. These muffins freeze well, too. Just defrost individual muffins in the microwave for 30 to 60 seconds, or until gently warmed through.



 

Veggie Sticks & Dip


Veggie sticks might sound bland, but they don't have to be! We love pairing our veggie sticks with delicious homemade, healthy dips such as beetroot hummus. If you’re short on time, try one of our delicious pesto, or hummus dips in store.


Pre-cut up veggies like carrot and celery can be a great time-saver during the week. To prevent them from drying out, either wrap them in moist paper towel or store in cold water in an air-tight container.





 

Caramelised Onion & Balsamic Tomato Tart


Flaky puff pastry dough topped with caramelised onions, two kinds of cheese, fresh thyme, basil, and balsamic cherry tomatoes. Once baked, the pastry dough turns golden brown and the tomatoes burst, turning sweet and delicious. You just can’t beat these easy tarts for an afternoon snack!


Keeping your freezer stocked with puff pastry is a necessity. All you need to do is layer on the toppings, and you have quick, delicious snacks ready to go.



 

No blend bliss-ball recipe


No blending and no baking... it doesn't get easier than this — sometimes simple is best! Perfect for both kids and adults alike, these no blend bliss balls are the perfect snack addition for the lunchbox.





 


We love — Zucchini Slice


Simple, cost-effective and super delicious, this zucchini and bacon slice makes a quick and tasty dinner or lunchbox addition. Freezer friendly and perfect eaten hot or cold, this easy one-bowl recipe uses basic pantry staples and only takes 10 minutes to prepare!



 

Almond, Coconut, Granola Bars


These homemade granola bars are a healthy and delicious snack! Made simply with almonds, coconut, oats, almond or peanut butter, and honey or maple syrup. These bars require about 15 minutes of prep time, then an hour-long rest in the refrigerator to set.




 

Planning and prepping food ahead is key to healthy lunches for the week! While this tip may seem quite a chore, it is very effective. It just means spending a little time getting organised at the weekends to see you 'lunch ready’ for the week ahead.
